VEG CURRIES

Bendi Fry (Stuffed)   Ingredients: Bhindi/okra (lady finger)-250 gm Gramflour (besan)-3 tbsp Cumin seeds-1/2 tsp Turmeric powder-1/3 tsp Red chilli powder-1/3 tsp Garam masala powder-1/2 tsp garlic and green chilli or paste-1 tbsp Oil-4 tbsp Salt to taste Process: Wash the bhindi and let it dry, slit it for stuffing. In a bowl: Mix all the ingredients except bhindi, cumin seeds and oil (do not add water). Gently stuff the bhindi with prepared masala one at a time and keep it aside. Heat a pan, add cooking oil and let it heat. Add cumin seeds and fry it for few seconds, simmer the flame. Add the stuffed bhindi one by one in the pan. Cover the half of the pan and cook it on low flame for 6-8 minutes. Keep stirring or tossing in between. Cover the pan and cook it for a minute on low-medium flame. Fry it for 30 seconds on high flame to make it crispy, keep tossing/stirring. Turn off the flame, Stuffed

Chicken Leg Pieces Fry Ingredients for Chicken leg  p ieces Fry : 1/2 kg boneless chicken breast, cut into small cubes 2 tsp garam masala Salt to taste 1 tbsp ginger garlic paste 1 tbsp coriander powder 2 tsp red chili powder 3 tbsp oil 2 tbsp yogurt 2 green chili Method: Grind the green chili in a blender and mix with yogurt and set aside. Cook the boneless chicken in a pan with salt, ginger garlic paste and cook till water dries up. Add the coriander powder, garam masala,  yogurt and green chili paste and cook on low flame till the chicken is tender Heat oil in a non stick pan and add the cooked chicken. Fry well. Add the chili powder and cook for further 3-4 minutes, stirring well. Konaseema Natu Kodi Kura ( Country Chicken Curry) Ingredients: Country Chicken– 1/2kg Onions(sliced) – 3 Green chily(sliced) – 4 Tomato(chopped) – 2 Poppy seeds – 1 tsp Coconut(optional) – 2 inch Cashew nuts(optional) – 5 Pumpkin seeds(optional) – 1/4 tsp Turmeric powder – 1/4 tsp Red chily powder 2or 3 tsp Salt – to taste Refined oil – 4 or 5 tsp (i used ground nut oil) Garlic Paste – 1 1/2 tsp Garlic Paste – 1 1/2 tsp Coriander leaves Curry leaves Garam Masala-3 tsp Process: Take a bowl then Poppy &pumpkin seeds are Soaked in warm water. take a bowl add chicken then add turmeric, chily, ginger&garlic paste mix well & keep aside for 30 minutes.
